Basic Pesto Recipe
Ingredients
- 1/3 cup Pine Nuts (or Substitute, Walnuts, Pecans, Almonds or Pistachios)
- 2 cloves of garlic large, roughly chopped
- 2 cup Basil leaves fresh , lightly packed
- 1/2 tsp salt
- 1/2 tsp pepper
- 2/3 cup olive oil Extra virgin
- 1/2 cup Parmigiano-Reggiano cheese (not parmesan) grated
Instructions
- In a food processor, chop nuts and garlic.
- Add Basil, salt & pepper until finely chopped.
- With the food processor running, slowly add the olive oil.
- Then add the Parmigiano cheese until smooth.
- Add to your pasta and enjoy!
Notes
Store in an airtight container with a thin layer of olive oil on top to prevent browning.
Will keep in the fridge for about a week or freeze for up to 6 months.
